Ingredients
2 tablespoons olive oil
1 medium yellow onion
2 cloves garlic
2 medium carrots diced
2 stalks celery diced
1 medium zucchini diced
1 bell pepper diced (any color)
1 can (14.5 ounces) diced tomatoes with juice
4 cups vegetable broth
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and pepper to taste
1 cup green beans trimmed and cut into 1-inch pieces
1 cup spinach or kale
Juice of 1 lemon
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onion and garlic, sautéing until the onion is translucent.
- Stir in the carrots, celery, zucchini, and bell pepper; cook for about 5-7 minutes.
- Add the diced tomatoes, vegetable broth, dried thyme, dried oregano, salt, and pepper; bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add green beans and spinach (or kale) and cook for an additional 5 minutes.
- Stir in lemon juice before serving.
