Alice Springs Chicken is a savory and delicious dish featuring tender chicken breasts marinated in a honey Dijon mix, topped with mushrooms, bacon, and melted cheese.

1/2 cup Dijon mustard
1/2 cup honey
1/4 cup mayo
2 teaspoons lemon juice
3 to 4 boneless
skinless chicken breasts (about 1 ½ pounds)
2 Tablespoons salted butter
6 ounces mushrooms sliced
1/2 teaspoon seasoned salt
1/4 teaspoon black pepper
1 Tablespoon olive oil
6 slices bacon cooked then chopped
2 cups Colby-Jack shredded cheese
Freshly chopped parsley
Instructions
- In a bowl, whisk together Dijon mustard, honey, mayo, and lemon juice to create the marinade.
- Place the chicken breasts in a large zip-top bag or dish and pour the marinade over them. Seal or cover, and refrigerate for at least 2 hours, or overnight for best results.
- Preheat your oven to 350°F (175°C).
- In a skillet, melt the butter over medium heat. Add the sliced mushrooms, seasoned salt, and black pepper, cooking until the mushrooms are tender.
- In the same skillet, add a tablespoon of olive oil. Remove the chicken breasts from the marinade, and cook for 5-7 minutes on each side until golden brown.
- Transfer the chicken to a baking dish. Top each breast with the cooked mushrooms, chopped bacon, and shredded cheese.
- Bake in the preheated oven for 20-25 minutes, until the cheese is melted and the chicken is cooked through.
- Garnish with freshly chopped parsley and serve warm.
Notes
For more flavor, marinate the chicken overnight. Adjust the cheese type for a different taste.
