Ingredients
1 lb (450g) spaghetti or your preferred pasta
2 tablespoons olive oil (for sautéing)
Salt
to taste (for pasta water)
1 lb (450g) fresh asparagus
trimmed and cut into 1-inch pieces
2 tablespoons olive oil (for sautéing)
2 garlic cloves
minced
Zest and juice of 1 lemon
1/2 cup freshly grated Parmesan cheese
1/4 teaspoon red pepper flakes (optional)
Salt and freshly ground black pepper
to taste
1/2 cup pasta water
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add asparagus and sauté for 3-4 minutes until tender.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Stir in lemon zest, lemon juice, red pepper flakes, salt, and pepper; cook for another minute.
- Add the drained pasta to the skillet, along with reserved pasta water and Parmesan cheese. Toss everything together until well combined and creamy.
- Serve immediately, garnished with fresh herbs and extra Parmesan if desired.
Notes
For added flavor, substitute some of the olive oil with butter. Feel free to customize with other vegetables or protein as desired.
