2 & 1/4 pounds boneless skinless chicken breasts cut into 1 inch pieces
1 pound sliced bacon cut into thirds
2/3 cup packed brown sugar
1 tablespoon chili powder
1/8 teaspoon cayenne pepper
salt to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with tinfoil.
- Place a cooling rack on top of the prepared baking sheet.
- In a bowl, combine brown sugar, chili powder, cayenne pepper, and salt to taste.
- Wrap each chicken piece with a third of a slice of bacon and secure with a toothpick.
- Dredge each bacon-wrapped chicken bite in the brown sugar mixture, coating evenly.
- Arrange the bites on the cooling rack and bake for 25-30 minutes, or until bacon is crispy and chicken is cooked through.
- Let cool slightly before serving. Enjoy!
Notes
For a spicier kick, increase cayenne pepper to 1/4 teaspoon. Make sure to monitor the chicken bites closely to avoid burning.
