Description
Delicious Baja Fish Tacos feature crispy beer-battered fish, zesty citrus slaw, and creamy chipotle mayo, all wrapped in warm corn tortillas for a flavorful meal.
Ingredients
1 1/2 – 2 pounds fresh cod sliced
1 cup all purpose flour
1/2 cup panko bread crumbs
12 ounces beer
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon salt
2 cups cole slaw mix
1/2 cup chopped cilantro
2 Tablespoons lime juice
2 Tablespoons pineapple juice
1/8 teaspoon salt
1/2 cup mayo
1 teaspoon honey
1 teaspoon adobo sauce
2 cups Canola oil
1 package white corn tortillas
1–2 avocados thinly sliced
Instructions
- In a large bowl, mix flour, panko, cumin, garlic powder, onion powder, chili powder, and salt.
- Pour in the beer, whisking until smooth to create the batter.
- Heat canola oil in a deep pan to 350°F (175°C).
- Dip cod slices into the batter and fry in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
- For the slaw, combine cole slaw mix, cilantro, lime juice, pineapple juice, and salt in a bowl. Toss to combine.
- To make the chipotle mayo, mix mayo, honey, and adobo sauce in a small bowl.
- Warm corn tortillas in a skillet.
- Assemble tacos by placing fried fish, slaw, chipotle mayo, and avocado slices on each tortilla.
Notes
Serve immediately for the best crispiness in the fish. You can customize the toppings according to your preference.
