Ingredients
1 and 1/2 cups (360ml) apple cider
2 cups (250g) all-purpose flour (spooned & leveled)
1 teaspoon baking soda
3/4 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon apple pie spice
1/4 teaspoon salt
2 tablespoons (28g) unsalted butter, melted
1 large egg, at room temperature
1/2 cup (100g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
1/2 cup (120ml) milk, at room temperature
1 teaspoon pure vanilla extract
For the Topping:
1 cup (200g) granulated sugar
3/4 teaspoon ground cinnamon
3/4 teaspoon apple pie spice
6 tablespoons (85g) unsalted butter, melted
Instructions
Reduce the apple cider: Heat 1 and 1/2 cups of apple cider in a saucepan over medium heat. Let it simmer until reduced to about 1 cup to concentrate the flavor.
Preheat the oven: Preheat your oven to 375°F (190°C) and grease a donut pan.
Prepare the dry ingredients: In a large bowl, combine 2 cups of all-purpose flour, 1 teaspoon baking soda, 3/4 teaspoon baking powder, 1 teaspoon ground cinnamon, 1 teaspoon apple pie spice, and 1/4 teaspoon salt.
Mix the wet ingredients: In another bowl, whisk together 2 tablespoons melted butter, 1 large egg, 1/2 cup brown sugar, 1/2 cup granulated sugar, 1/2 cup milk, and 1 teaspoon vanilla extract.
Combine wet and dry ingredients: Add the reduced cider to the wet ingredients, then stir in the dry ingredients until just combined.
Fill the donut pan: Spoon the batter into the donut pan, filling each mold about 3/4 full.
Bake: Bake for 12-15 minutes, or until a toothpick inserted into a donut comes out clean.
Make the topping: In a small bowl, combine 1 cup granulated sugar, 3/4 teaspoon cinnamon, and 3/4 teaspoon apple pie spice.
Coat the donuts: Allow the donuts to cool slightly. Dip each warm donut in the melted butter, then roll in the cinnamon-sugar mixture to coat.
Notes
For a healthier twist, use less sugar or substitute with a natural sweetener like honey or maple syrup.
You can substitute apple pie spice with additional cinnamon, nutmeg, and allspice for a similar flavor.
If you don’t have a donut pan, you can also bake the batter in a muffin tin, though the texture will differ slightly.
For added fun, top with a drizzle of caramel sauce or a light glaze.
