  • 2 tablespoons (28g) unsalted butter, melted

  • 1 large egg, at room temperature

  • 1/2 cup (100g) packed light or dark brown sugar

  • 1/2 cup (100g) granulated sugar

  • 1/2 cup (120ml) milk, at room temperature

  • 1 teaspoon pure vanilla extract

For the Topping:

  • 1 cup (200g) granulated sugar

  • 3/4 teaspoon ground cinnamon

  • 3/4 teaspoon apple pie spice

  • 6 tablespoons (85g) unsalted butter, melted


Instructions

  • Reduce the apple cider: Heat 1 and 1/2 cups of apple cider in a saucepan over medium heat. Let it simmer until reduced to about 1 cup to concentrate the flavor.

  • Preheat the oven: Preheat your oven to 375°F (190°C) and grease a donut pan.

  • Prepare the dry ingredients: In a large bowl, combine 2 cups of all-purpose flour, 1 teaspoon baking soda, 3/4 teaspoon baking powder, 1 teaspoon ground cinnamon, 1 teaspoon apple pie spice, and 1/4 teaspoon salt.

  • Mix the wet ingredients: In another bowl, whisk together 2 tablespoons melted butter, 1 large egg, 1/2 cup brown sugar, 1/2 cup granulated sugar, 1/2 cup milk, and 1 teaspoon vanilla extract.

  • Combine wet and dry ingredients: Add the reduced cider to the wet ingredients, then stir in the dry ingredients until just combined.
