-
1 ½ cups (360ml) apple cider
-
2 cups (250g) all-purpose flour (spooned & leveled)
-
1 teaspoon baking soda
-
¾ teaspoon baking powder
-
1 teaspoon ground cinnamon
-
1 teaspoon apple pie spice
-
¼ teaspoon salt
-
2 tablespoons (28g) unsalted butter, melted
-
1 large egg, at room temperature
-
½ cup (100g) packed light or dark brown sugar
-
½ cup (100g) granulated sugar
-
½ cup (120ml) milk, at room temperature
-
1 teaspoon pure vanilla extract
For the topping:
-
1 cup (200g) granulated sugar
-
¾ teaspoon ground cinnamon
-
¾ teaspoon apple pie spice
-
6 tablespoons (85g) unsalted butter, melted
Instructions
-
Preheat oven to 350°F (175°C). Grease a donut pan.
-
In a saucepan, simmer 1 ½ cups apple cider over medium heat until reduced to 1 cup. Let cool slightly.
-
In a bowl, whisk together flour, baking soda, baking powder, cinnamon, apple pie spice, and salt.
-
In another bowl, mix melted butter, egg, brown sugar, granulated sugar, milk, and vanilla.
-
Gradually combine dry ingredients with wet ingredients. Fold in reduced apple cider until just combined.
-
Spoon batter into prepared donut pan. Bake 12–15 minutes, or until donuts spring back lightly when touched.
-
For the topping: mix sugar, cinnamon, and apple pie spice in a bowl. Dip warm donuts in melted butter, then coat with spiced sugar mixture.
-
Serve warm and enjoy the taste of autumn!
Notes
-
Reduce the apple cider for a stronger apple flavor.
-
Do not overmix the batter; this keeps donuts soft.
-
Can be frozen for up to 2 months; reheat before serving.
-
For variation, drizzle with glaze or caramel sauce.
