2 cups (250g) all-purpose flour (spooned & leveled)

1 teaspoon baking soda

3/4 teaspoon baking powder

1 teaspoon ground cinnamon

1 teaspoon apple pie spice

1/4 teaspoon salt

2 Tablespoons (28g) unsalted butter

melted

1 large egg

at room temperature

1/2 cup (100g) packed light or dark brown sugar

1/2 cup (100g) granulated sugar

1/2 cup (120ml) milk

at room temperature

1 teaspoon pure vanilla extract

1 cup (200g) granulated sugar

3/4 teaspoon ground cinnamon

3/4 teaspoon apple pie spice

6 Tablespoons (85g) unsalted butter

melted


Instructions

  • Preheat your oven to 350°F (175°C) and grease a donut pan.
  • In a saucepan, bring the apple cider to a boil over medium heat. Reduce the heat and simmer until it has reduced to about 1 cup (240ml), about 15-20 minutes. Let it cool slightly.
  • In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, apple pie spice, and salt.
  • In another bowl, whisk the melted butter, egg, brown sugar, granulated sugar, milk, vanilla extract, and reduced apple cider until smooth.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Spoon the batter into the prepared donut pan, filling each cavity about two-thirds full.
  • Bake for 12-15 minutes, or until a toothpick inserted comes out clean. Let the donuts cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • For the topping, mix the granulated sugar, cinnamon, and apple pie spice in a bowl. Brush the warm donuts with melted butter, then coat with the sugar mixture.

Notes

Make sure to measure the apple cider before reducing it. You can use either light or dark brown sugar based on your preference.
