Ingredients
1½ cups (360g) cottage cheese (full-fat recommended)
4 large eggs (brought to room temperature 30 minutes before blending)
1 cup (90g) old-fashioned rolled oats
1 ripe banana (the spottier

⅓ cup (80ml) maple syrup
1 tsp baking soda
1 cup (150g) fresh blueberries (frozen works too
use straight from freezer)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
- In a blender, combine cottage cheese, eggs, oats, banana, maple syrup, and baking soda until smooth and creamy.
- Fold in the blueberries gently to distribute throughout the mixture.
- Pour the mixture into the prepared baking dish, smoothing the top with a spatula.
- Bake in the preheated oven for 25-30 minutes or until the edges are golden and the center is set.
