Description

Baked Eggs Napoleon is a delicious and easy brunch recipe that combines flaky puff pastry with a creamy spinach filling and perfectly baked eggs. Perfect for impressing guests or enjoying a cozy weekend meal.

1 package (14.1 oz) frozen puff pastry sheets

1 beaten egg (for egg wash)

Everything bagel seasoning (optional)

1 tbsp olive oil

1 finely chopped shallot

2 minced garlic cloves

10 oz fresh spinach

roughly chopped

4 oz softened cream cheese

1/4 cup heavy cream

1/4 cup grated Parmesan

1/4 tsp nutmeg

4 large eggs

Salt and freshly ground black pepper to taste

Chopped fresh chives (for garnish)


Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Roll out the frozen puff pastry sheets on a lightly floured surface and cut them into squares.
  • Place the pastry squares on the prepared baking sheet and brush the edges with beaten egg.
  • In a skillet, heat olive oil over medium heat, add chopped shallot and minced garlic, and sauté until softened.
  • Add roughly chopped spinach and cook until wilted, then remove from heat and mix in cream cheese, heavy cream, grated Parmesan, and nutmeg.
  • Season the spinach mixture with salt and pepper to taste, and spoon it into the center of each pastry square.
  • Make a small well in the spinach mixture of each pastry and carefully crack an egg into each well.
  • Sprinkle everything bagel seasoning, if desired, over the eggs and bake in the preheated oven for 20-25 minutes or until the eggs are set to your liking.
  • Garnish with chopped fresh chives before serving.

Notes

For a richer flavor, use more cream cheese or add crumbled feta cheese to the spinach mixture. Check the eggs after 20 minutes to ensure they are cooked to your preference.
