Description
Baked Feta Orzo is a creamy, delicious dish that combines the savory flavors of feta cheese with fresh vegetables and orzo pasta, baked to perfection.
Ingredients
1x 200g/7oz block of Feta
3 tbsp Olive Oil
300g / 10oz Baby Plum or Cherry Tomatoes halved
200g / 7oz Asparagus woody ends removed then sliced into 3 or 4 chunks
2 cups / 400g uncooked Orzo
100g / 3.5oz Baby Spinach roughly diced
1/2 small bunch of Fresh Basil finely diced
2 tbsp finely diced Fresh Chives
2 heaped tbsp / 2oz / 60g Mascarpone
Salt & Black Pepper to taste
Instructions
- Preheat your oven to 200°C (400°F).
- In a large ovenproof dish, combine the olive oil, halved tomatoes, asparagus, uncooked orzo, and season with salt and black pepper.
- Place the block of feta in the center of the mixture.
- Drizzle a little more olive oil on top of the feta and sprinkle with fresh basil and chives.
- Bake in the preheated oven for about 30 minutes or until the feta is golden and the orzo is cooked.
- Remove from the oven and stir in the mascarpone and baby spinach until well combined.
- Serve warm and enjoy your Baked Feta Orzo!
Notes
For extra flavor, you can add more herbs or spices as per your preference. Ensure to remove the woody ends of the asparagus for the best texture.
