Ingredients
4 large russet potatoes (about 2 lbs / 900 g)
3 tablespoons olive oil
3 cloves garlic
minced
½ teaspoon garlic powder
1 teaspoon paprika (smoked or sweet)
½ teaspoon dried oregano
½ teaspoon dried thyme
¾ teaspoon salt
½ teaspoon black pepper
⅓ cup (35 g) grated Parmesan cheese
2 tablespoons chopped fresh parsley (optional
for garnish)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash the potatoes thoroughly and cut them into wedges.
- In a large bowl, combine the olive oil, minced garlic, garlic powder, paprika, oregano, thyme, salt, and black pepper. Add the potato wedges and toss until evenly coated.
- Spread the seasoned wedges in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.
- Remove from the oven and immediately sprinkle with grated Parmesan cheese.
- Garnish with chopped fresh parsley, if desired, and serve hot with your favorite dipping sauces.
Notes
For extra crispiness, soak the potato wedges in water for 30 minutes before baking. Always adjust the seasoning according to your taste.
