3/4 cup heavy whipping cream

1 Tablespoon powdered sugar

2/3 cup sugar

1/4 cup cornstarch

1/2 teaspoon salt

3 cups whole milk

2 eggs

2 tablespoons butter

1 tablespoon vanilla extract

1 1/2 cups graham cracker crumbs

1/3 cup butter melted

1 tablespoon sugar


Instructions

  • Prepare the vanilla pastry cream by combining sugar, cornstarch, and salt in a saucepan. Gradually whisk in the milk over medium heat until thickened.
  • Whisk the eggs in a separate bowl, then temper them with a bit of the hot milk mixture before pouring them back into the saucepan. Cook for an additional 2-3 minutes.
  • Remove from heat and stir in butter and vanilla extract. Allow it to cool.
  • In another bowl, whip the heavy cream with powdered sugar until soft peaks form.
  • Fold the whipped cream into the cooled pastry cream mixture until well combined.
  • In individual serving dishes, layer sliced bananas, a drizzle of caramel sauce, and the vanilla cream mixture.
  • Prepare the graham cracker crumble by mixing crumbs with melted butter and sugar. Sprinkle over the top of the dessert.
  • Chill the dessert in the refrigerator for at least 1 hour before serving.

Notes

Feel free to adjust the sweetness of the pastry cream by reducing the sugar. You can also use store-bought caramel sauce for convenience.
