Description
Deliciously moist Banana Chocolate Chip Muffins bursting with the rich flavor of ripe bananas and sweet chocolate chips, perfect for breakfast or a snack.
Ingredients

1 1/2 cups all purpose flour (180g)
1 teaspoon baking soda
½ tsp salt
2/3 cup sugar (113g)
1 cup semisweet chocolate chips plus more for the tops if desired
3 medium ripe bananas or 1 cup of mashed banana
1/3 cup melted butter slightly cooled (75g)
1 large egg
1 teaspoon vanilla (5ml)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the flour, baking soda, and salt.
- In another bowl, mash the ripe bananas and then add the sugar, melted butter, egg, and vanilla. Mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Do not overmix.
- Fold in the chocolate chips, reserving a few for topping if desired.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full. Sprinkle extra chocolate chips on top.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.
Notes
Make sure your bananas are very ripe for the best flavor and sweetness. You can also add nuts for extra crunch!
