Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mash the ripe bananas until smooth.
- Add rolled oats and vanilla protein powder to the mashed bananas, mixing until well combined.
- Stir in nut butter, unsweetened applesauce, ground flaxseed or chia seeds, and cinnamon until the mixture is uniform.
- Fold in dark chocolate chips if using.
- Drop spoonfuls of the cookie mixture onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
