Ingredients
1 1/2 lbs boneless
skinless chicken breasts or thighs

2 tablespoons olive oil
1/2 cup mayonnaise
1/4 cup sweet chili sauce
2 tablespoons sriracha sauce
3 cups cooked rice (white

1 cup shredded carrots
1 cup cucumber
thinly sliced
1/2 cup edamame
shelled and cooked
1/4 cup chopped green onions
1/4 cup chopped cilantro
1 tablespoon sesame seeds
Lime wedges

Instructions
- Season the chicken with salt and pepper.
- Heat olive oil in a pan over medium heat and cook the chicken until golden brown and cooked through, about 6-7 minutes per side, then let it rest.
- In a bowl, mix the mayonnaise, sweet chili sauce, and sriracha until combined to create the sauce.
- Slice the cooked chicken into strips.

- Garnish with green onions, cilantro, sesame seeds, and lime wedges.
