These Bangin’ Breakfast Potatoes are crispy, savory, and packed with flavor, making them a perfect start to your day.
Ingredients

2 slices of bacon
1 lb. small golden potatoes
2 tablespoons olive or avocado oil
Salt
pepper and Old Bay seasoning as needed
1–2 garlic cloves
minced
1 tablespoon pure maple syrup
Optional: fresh parsley or chives for garnish
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cook the bacon in a skillet over medium heat until crispy, then remove and crumble it, leaving the bacon fat in the pan.
- In the same skillet, add the diced golden potatoes and toss them in the bacon fat for extra flavor.
- Drizzle the olive or avocado oil over the potatoes and season with salt, pepper, and Old Bay seasoning. Toss to coat evenly.
- Spread the potatoes evenly on the prepared baking sheet and roast for about 25 minutes or until fork-tender and golden brown, stirring halfway.
- In the last few minutes of cooking, add the minced garlic and maple syrup to the potatoes, tossing well to combine.
- Once done, remove from the oven, sprinkle the crumbled bacon over the top, and garnish with fresh parsley or chives if desired.
Notes
For an extra kick, add some paprika or cayenne pepper along with the other seasonings.
