This BBQ Ranch Chicken Bake is a hearty, one-pan dinner that combines smoky barbecue sauce, creamy ranch, tender chicken, melted cheese, and colorful veggies. It’s quick to prepare, family-friendly, and perfect for weeknight meals or casual gatherings.
Ingredients
4 boneless, skinless chicken breasts (about 6–7 ounces each)
½ cup barbecue sauce (your favorite brand or homemade)
½ cup ranch dressing
1 cup shredded cheddar cheese (or cheddar–Monterey Jack blend)
1 cup frozen corn, thawed
1 cup black beans, rinsed and drained
1 red bell pepper, diced
1 small red onion, finely chopped
2 tablespoons olive oil
1 teaspoon kosher salt
½ teaspoon black pepper
½ teaspoon smoked paprika
½ teaspoon garlic powder
Optional garnish: chopped cilantro, sliced green onions
Instructions
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Prepare chicken: Pat chicken dry with paper towels. Place in the baking dish.
Season chicken: Combine salt, pepper, paprika, and garlic powder. Sprinkle evenly over both sides of the chicken.
Add vegetables: Scatter corn, black beans, bell pepper, and onion around chicken. Drizzle with olive oil and toss lightly.
Mix sauce: Whisk together barbecue sauce and ranch dressing. Spread evenly over chicken.
Bake covered with foil for 25 minutes. Remove foil, sprinkle cheese over top, and bake uncovered for 10–15 minutes until chicken reaches 165°F (74°C).
Rest & serve: Let rest for 5 minutes before garnishing with cilantro or green onions.
