  • ½ cup barbecue sauce (your favorite brand or homemade)

  • ½ cup ranch dressing

  • 1 cup shredded cheddar cheese (or cheddar–Monterey Jack blend)

  • 1 cup frozen corn, thawed

  • 1 cup black beans, rinsed and drained

  • 1 red bell pepper, diced

  • 1 small red onion, finely chopped

  • 2 tablespoons olive oil

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • ½ teaspoon smoked paprika

  • ½ teaspoon garlic powder

  • Optional garnish: chopped cilantro, sliced green onions


Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

  • Prepare chicken: Pat chicken dry with paper towels. Place in the baking dish.

  • Season chicken: Combine salt, pepper, paprika, and garlic powder. Sprinkle evenly over both sides of the chicken.

  • Add vegetables: Scatter corn, black beans, bell pepper, and onion around chicken. Drizzle with olive oil and toss lightly.

  • Mix sauce: Whisk together barbecue sauce and ranch dressing. Spread evenly over chicken.

  • Bake covered with foil for 25 minutes. Remove foil, sprinkle cheese over top, and bake uncovered for 10–15 minutes until chicken reaches 165°F (74°C).

  • Rest & serve: Let rest for 5 minutes before garnishing with cilantro or green onions.
