Fresh and zesty, this Best Greek Tzatziki Chicken Salad combines marinated chicken with crisp vegetables and creamy tzatziki for a delightful meal.
Ingredients
3 chicken breasts (cut into 1-inch cubes for even cooking)
1.5 tbsp olive oil (I use Bertolli extra virgin)
1 tsp oregano
1/2 tsp salt
pepper
4 cups romaine lettuce
1 cup tomatoes (halved or sliced into 1/2-inch pieces)
1 red onion (thinly sliced into half-moons)
1/2 cucumber
1/2 cup olives (I prefer Mezzetta pitted kalamata)
1/2 cup Greek dressing
2 cups tzatziki
3/4 cup feta (I like President crumbles for better texture)
2 tbsp fresh dill (chopped)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine chicken cubes with olive oil, oregano, salt, and pepper and mix to coat.
- Spread the marinated chicken on a baking sheet and bake for 20-25 minutes until fully cooked.
- While the chicken cooks, prepare the salad by chopping romaine lettuce, tomatoes, red onion, and cucumber in a large bowl.
- Add olives and Greek dressing to the salad mixture and toss well.
- Once the chicken is done, allow it to cool slightly before adding it to the salad.
- Top the salad with dollops of tzatziki, crumbled feta, and chopped fresh dill before serving.
Notes
For a fun twist, feel free to add grilled pita chips on top for extra crunch.
