This Best Homemade Caesar Salad Dressing is a creamy, tangy blend of garlic, Parmesan, and anchovy flavors that elevates any Caesar salad to perfection.
Ingredients
6 cloves garlic
peeled
divided
3/4 cup mayonnaise
6 tablespoons grated Parmesan cheese
divided
5 anchovy fillets
minced
1 tablespoon lemon juice
or more to taste
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
salt and freshly ground black pepper to taste
1/4 cup olive oil
4 cups day-old bread
cubed
1 head romaine lettuce
torn into bite-sized pieces
Instructions
- In a food processor, blend 3 cloves of garlic, mayonnaise, 3 tablespoons of Parmesan cheese, anchovy fillets, lemon juice, Worcestershire sauce, Dijon mustard, salt, and pepper until smooth.
- Slowly drizzle in the olive oil while blending to create a creamy emulsion.
- Taste and adjust seasoning with more lemon juice, salt, or pepper if desired.
- In a large bowl, combine the torn romaine lettuce with the dressing and toss to coat.
- In a separate pan, toast the cubed day-old bread in the oven until golden brown. Sprinkle remaining Parmesan cheese over the croutons.
- Serve the salad topped with croutons and remaining Parmesan cheese.
Notes
