1 cup chopped pecans

5 egg whites

8 ounces cream cheese

½ cup butter

4 cups confectioners’ sugar

1 teaspoon vanilla extract

½ cup chopped pecans


Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  • In a large bowl, cream together ½ cup softened butter, shortening, and sugar until light and fluffy.
  • Add the egg yolks one at a time, beating well after each addition.
  • In a separate bowl, mix together the flour and baking soda.
  • Add the flour mixture to the creamed mixture alternately with buttermilk, beginning and ending with the flour mixture. Stir in vanilla extract, coconut, and chopped pecans.
  • In another bowl, beat the egg whites until stiff peaks form and fold them gently into the cake batter.
  • Divide the batter evenly among the prepared cake pans.
  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
  • For the frosting, beat cream cheese and ½ cup softened butter until smooth. Gradually add confectioners’ sugar and mix until well combined. Stir in vanilla extract and fold in chopped pecans.
  • Once the cakes are cooled, frost the layers generously and top as desired. Serve and enjoy!
