  • ½ teaspoon dried oregano

  • 2 zucchini, sliced

  • 1 (16 ounce) package spinach fettuccine pasta

  • Salt and pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sweet Italian sausage, breaking it apart as it cooks. Brown the sausage, then add minced garlic and chopped onions. Sauté until fragrant and translucent.

  2. Add the two cans of whole peeled tomatoes, dry red wine, and beef broth to the pot. Season with dried basil, oregano, salt, and pepper. Bring to a simmer and cook for about 15 minutes.
