4 tablespoons vegetable oil or bacon grease divided
2 cups coarse stone-ground cornmeal
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
2 large eggs
1–½ cups buttermilk
Instructions
- Preheat your oven to 400°F (200°C) and grease a 9-inch cast-iron skillet or baking dish with 2 tablespoons of oil or bacon grease.
- In a large mixing bowl, combine the cornmeal, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the eggs, buttermilk, and the remaining 2 tablespoons of oil or bacon grease.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Pour the batter into the prepared skillet and smooth the top.
- Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool slightly before slicing and serving.
Notes
