Instructions
- In a large mixing bowl, whisk together the sugar and beaten eggs until the mixture is light and fluffy.
- Fold in the chopped peaches, heavy cream, half-and-half cream, vanilla extract, and salt until well combined.
- Chill the mixture in the refrigerator for at least 2 hours, or until thoroughly chilled.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer the churned ice cream to a lidded container and freeze for at least 4 hours or until firm.
Notes
For a richer flavor, use ripe peaches. Adjust the sugar depending on the sweetness of the peaches used.
