4 cups sweet potatoes
peeled and cubed
1/2 cup brown sugar
1/2 cup milk
1/4 cup melted butter
2 eggs
beaten
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup miniature marshmallows
1/2 cup chopped pecans
1/2 cup brown sugar (for topping)
1/4 cup flour (for topping)
1/4 cup melted butter (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, boil the sweet potatoes until tender, then drain and mash them.
- In a mixing bowl, combine the mashed sweet potatoes, brown sugar, milk, melted butter, beaten eggs, vanilla extract, salt, and cinnamon. Mix well.
- Pour the sweet potato mixture into a greased baking dish.
- In another bowl, mix together the topping ingredients: brown sugar, flour, and melted butter. Stir in chopped pecans and sprinkle over the sweet potato mixture.
- Top with miniature marshmallows.
- Bake in the preheated oven for 30 minutes or until the topping is golden brown.
- Allow to cool slightly before serving.
Notes
For extra flavor, you can add a pinch of nutmeg or use maple syrup instead of brown sugar.
