1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
3 bananas mashed
¾ cup white sugar
⅓ cup melted butter
1 egg beaten
Instructions
- Preheat the oven to 350°F (175°C) and lightly spray a mini muffin tin with cooking spray.
- In a large bowl, combine the all-purpose flour, baking powder, and baking soda.
- In another bowl, mix the mashed bananas, white sugar, melted butter, and beaten egg until well combined.
- Pour the banana mixture into the flour mixture and stir until just combined.
- Spoon the batter into the prepared mini muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow to cool slightly in the pan before transferring to a wire rack to cool completely.
Notes
For added flavor, consider mixing in chocolate chips or nuts.
