1 cup vegetable oil
2 cups grated zucchini
2 teaspoons vanilla extract
3 cups all-purpose flour
½ cup chopped walnuts

Instructions
- Preheat the oven to 350°F (175°C) and grease two 9×5 inch loaf pans.
- In a large mixing bowl, beat the eggs and sugar until well combined.
- Mix in the vegetable oil, grated zucchini, and vanilla extract.
- In another bowl, whisk together the all-purpose flour, ground cinnamon, salt, baking soda, and baking powder.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Fold in the chopped walnuts.
- Divide the batter evenly between the prepared loaf pans.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the zucchini bread to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
Notes
For extra moisture, you can add a little bit of applesauce into the batter. This recipe also freezes well, so feel free to make extra to enjoy later.
