Instructions

  • Preheat the oven to 350°F (175°C) and grease two 9×5 inch loaf pans.
  • In a large mixing bowl, beat the eggs and sugar until well combined.
  • Mix in the vegetable oil, grated zucchini, and vanilla extract.
  • In another bowl, whisk together the all-purpose flour, ground cinnamon, salt, baking soda, and baking powder.
  • Gradually add the dry ingredients to the wet mixture and stir until just combined.

  • Divide the batter evenly between the prepared loaf pans.
