Enjoy a homemade version of the classic Dan Dan Noodles that’s even better than takeout! This flavorful dish combines creamy peanut butter, savory soy sauce, and a hint of heat from crushed red pepper flakes, all tossed with tender noodles and fresh vegetables.
Ingredients
1/3 cup + 2 tablespoons sesame oil
6 cloves garlic
thinly sliced or smashed
1–2 tablespoons crushed red pepper flakes
1/2 cup low sodium soy sauce
1/4 cup hoisin sauce (make sure to use GF
if needed)
1 tablespoon honey
2 tablespoons rice vinegar
3 tablespoons creamy peanut butter or tahini
8 ounces Chinese style egg noodles or rice noodles
2 1/2 cups low sodium chicken broth
2 cups fresh baby spinach
roughly chopped
1/2 pound ground chicken or pork
2 cups mixed mushrooms
chopped
black pepper
1 medium shallot
chopped
4 green onions
chopped
Instructions
- In a large pan, heat 1/3 cup of sesame oil over medium heat. Add the garlic and crushed red pepper flakes, sautéing until fragrant.
- Add the ground chicken or pork to the pan, cooking until browned. Season with black pepper.
- Stir in the chopped shallot and mixed mushrooms, cooking until mushrooms are softened.
- In a bowl, mix together soy sauce, hoisin sauce, honey, rice vinegar, and peanut butter until smooth. Pour this mixture into the pan.
- Add the chicken broth and bring to a simmer. Stir in the egg noodles or rice noodles and cook according to package instructions until al dente.
- Finally, add the chopped spinach and green onions, stirring until spinach is wilted. Adjust seasoning as needed.
Notes
For a gluten-free option, ensure all sauces used are gluten-free. You can substitute the protein with tofu for a vegetarian version.
