Ingredients
1 cup fresh blackberries (plus extra for garnish)
1/4 cup granulated sugar
1 tablespoon lemon juice
1 cup strong brewed coffee (cooled)
1/4 cup coffee liqueur (optional)
8 oz mascarpone cheese
1 cup heavy cream
1/2 cup granulated sugar
1 teaspoon vanilla extract
24 ladyfinger cookies (savoiardi)
cocoa powder (for dusting)
Instructions
- In a small bowl, combine the blackberries, 1/4 cup sugar, and lemon juice. Gently mash the mixture and set aside to allow the flavors to meld.
- In a large bowl, whisk together mascarpone cheese, heavy cream, 1/2 cup sugar, and vanilla extract until smooth and creamy.
- If using, combine brewed coffee and coffee liqueur in a shallow dish. Dip each ladyfinger into the coffee mixture for just a second, then lay them in a single layer in a 9×9 inch dish.
- Spread a layer of the mascarpone mixture over the ladyfingers, then spoon on some of the blackberry mixture.
- Repeat layers, ending with the mascarpone mixture on top.
- Cover the dish and refrigerate for at least 4 hours, or overnight for best results.
- Before serving, dust the top with cocoa powder and garnish with extra blackberries.
Notes
For a more intense blackberry flavor, consider blending some of the blackberries into a purée and mixing it into the mascarpone layer.
