1 large egg

1 teaspoon pure vanilla extract

1¾ cups (220 g) all-purpose flour

1 teaspoon cornstarch

½ teaspoon baking soda

¼ teaspoon salt

¾ cup (100 g) white chocolate chips

¾ cup (100 g) fresh or frozen blueberries (if frozen

don’t thaw)


Instructions

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, beat the cream cheese, granulated sugar, and vanilla extract until smooth. Set aside.
  • In another bowl, cream together the softened butter, light brown sugar, and remaining granulated sugar until fluffy.
  • Add the egg and vanilla extract to the butter mixture and mix until well combined.
  • In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Gently fold in the white chocolate chips and blueberries into the cookie dough.
  • Scoop tablespoons of the dough onto the prepared baking sheet, placing them a few inches apart.
  • Make an indentation in the center of each cookie and spoon a small amount of the cheesecake filling into the indent.
  • Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool before serving.

Notes

For a chewier cookie, reduce the baking time by a minute. If using frozen blueberries, do not thaw them, as they will release excess moisture.
