This Blueberry Sour Cream Coffee Cake is a delightful treat featuring moist cake infused with fresh blueberries and topped with a crunchy streusel. Perfect for breakfast or an afternoon snack.

Ingredients

Scale

2 cups (250 g) all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup (115 g) unsalted butter softened

1 cup (200 g) granulated sugar

2 large eggs room temperature

1 teaspoon pure vanilla extract

1 cup (240 g) sour cream

1 ½ cups (190 g) fresh or frozen blueberries

½ cup (100 g) brown sugar packed

⅓ cup (40 g) all-purpose flour

1 teaspoon ground cinnamon

¼ cup (60 g) unsalted butter melted

½ cup (60 g) powdered sugar

12 tablespoons milk

¼ teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a separate bowl, cream together softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • Add the sour cream and mix until well combined.
  • Gradually mix the dry ingredients into the wet ingredients until just combined. Gently fold in the blueberries.
  • Pour the batter into the prepared cake pan.
  • In a bowl, combine brown sugar, flour, and cinnamon. Stir in melted butter until crumbly. Sprinkle the streusel topping over the batter.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • If desired, mix the glaze ingredients together and drizzle over the cooled cake before serving.

Notes

For best results, use fresh blueberries, and if using frozen, do not thaw them before adding to the batter.
