1 cup Greek yogurt
1/2 cup blueberries
2 tbsp honey or maple syrup
1 tsp lemon juice
1/2 tsp vanilla extract
1 tsp cornstarch (optional)
Instructions
- In a mixing bowl, combine Greek yogurt, honey or maple syrup, lemon juice, and vanilla extract until smooth.
- In a small saucepan, heat blueberries with cornstarch (if using) on low heat until bubbly and slightly thickened, about 5 minutes.
- Spoon the yogurt mixture into molds or an ice cube tray, swirl in blueberry compote, and freeze for at least 3-4 hours.
- Once frozen, pop out the yogurt bites and enjoy as a refreshing snack!
