All-Purpose Flour

Instructions
- In a large bowl, combine the warm milk and yeast. Let sit for about 5 minutes until frothy.
- Add the sugar, eggs, melted butter, and vanilla to the yeast mixture and mix well.
- Gradually add the flour and mix until a dough forms. Knead on a floured surface for about 10 minutes until smooth.
- Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 hour.
- For the pastry cream, whisk together the cornstarch, sugar, and milk in a saucepan. Cook over medium heat until thickened, then stir in the egg yolks and vanilla. Remove from heat and cool.
- Once the dough has risen, punch it down and roll it out to about ½ inch thick. Cut into rounds and let them rise again for about 30 minutes.
- Heat oil in a deep fryer or heavy pot to 350°F (175°C). Fry the donuts until golden brown, about 2-3 minutes per side. Drain on paper towels.
- To make the ganache, heat the heavy cream and pour it over chopped chocolate. Let sit for a few minutes, then stir until smooth.
- Once cooled, fill the donuts with pastry cream using a piping bag. Dip the tops in chocolate ganache and let set before serving.
Notes
Make sure to use room temperature eggs for better emulsification. For best results, let the filled donuts sit for a while before serving to allow flavors to meld.
