Ingredients

2 bread bowls
2 large eggs
4 slices deli ham
or your favorite lunch meat
½ cup shredded mozzarella cheese
divided
½ cup baby spinach
¼ teaspoon sea salt
or more to taste
1 stem green onion
chopped for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- Carefully hollow out the bread bowls, leaving about 1/2 inch of bread at the bottom and sides.
- In a mixing bowl, whisk the eggs and season with sea salt.
- Place a layer of deli ham inside each bread bowl, then add a handful of baby spinach.
- Pour the beaten eggs evenly into the bread bowls.
- Sprinkle 1/4 cup of the shredded mozzarella cheese on top of each filled bread bowl.
- Bake in the preheated oven for about 20-25 minutes or until the eggs are set and the cheese is bubbly.
- Remove from the oven and let cool slightly before garnishing with chopped green onions.
