Enjoy a delicious and fun twist on breakfast with these Breakfast Egg Bread Bowls, filled with eggs, ham, cheese, and fresh spinach.


Ingredients

2 bread bowls

2 large eggs

4 slices deli ham

or your favorite lunch meat

½ cup shredded mozzarella cheese

divided

½ cup baby spinach

¼ teaspoon sea salt

or more to taste

1 stem green onion

chopped for garnish


Instructions

  • Preheat your oven to 350°F (175°C).
  • Carefully hollow out the bread bowls, leaving about 1/2 inch of bread at the bottom and sides.
  • In a mixing bowl, whisk the eggs and season with sea salt.
  • Place a layer of deli ham inside each bread bowl, then add a handful of baby spinach.
  • Pour the beaten eggs evenly into the bread bowls.
  • Sprinkle 1/4 cup of the shredded mozzarella cheese on top of each filled bread bowl.
  • Bake in the preheated oven for about 20-25 minutes or until the eggs are set and the cheese is bubbly.
  • Remove from the oven and let cool slightly before garnishing with chopped green onions.
