Ingredients

Ground pork sausage

Whole milk

Plain flour

Fine salt

Ground black pepper

Streaky bacon

Flatbreads

Fresh spinach

Cheddar Jack cheese

Cherry tomatoes

Large eggs


Instructions

  • In a skillet over medium heat, cook the ground pork sausage until browned. Remove and set aside.
  • In the same skillet, add the streaky bacon and cook until crispy. Remove and drain on paper towels.
  • In a saucepan, whisk together whole milk and plain flour over medium heat until it thickens into a creamy gravy. Season with fine salt and ground black pepper.
  • Prepare the flatbreads on a baking sheet. Spread a layer of gravy on each flatbread.
  • Top with cooked sausage, crispy bacon, fresh spinach, and cheddar jack cheese.
  • Bake in a preheated oven at 400°F (200°C) for about 10 minutes or until the cheese is bubbly.
  • While baking, scramble or poach large eggs to your preference.
  • Remove flatbreads from the oven and top with halved cherry tomatoes and finished eggs before serving.

Notes

Feel free to substitute ground pork sausage with turkey sausage for a lighter option. You can also experiment with different cheeses or add additional toppings like avocado or hot sauce.
