Instructions
- Preheat your oven to 350°F (175°C) and grease a cake pan.
- In a large bowl, cream together the salted dairy free butter and both types of brown sugar until light and fluffy.
- Add the dairy free yoghurt, soya milk, and apple cider vinegar, mixing well after each addition.
- In another bowl, whisk together the self raising flour, baking powder, bicarbonate of soda, cinnamon, and a pinch of salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the espresso or espresso powder until evenly distributed.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Once cooled, dust with icing sugar before serving.
