Ingredients
Penne or fusilli pasta
Boneless skinless chicken breasts

Shallot
Cherry tomatoes

Instructions
- Cook the penne or fusilli pasta according to package instructions until al dente. Reserve some pasta cooking water before draining.
- While the pasta cooks, season the chicken breasts with salt and pepper, then sear them in olive oil over medium-high heat until golden brown and cooked through. Let them rest before slicing.
- In the same pan, add minced garlic and shallots, cooking until fragrant. Then add halved cherry tomatoes and sauté until they soften and form a light sauce.
- Stir in balsamic vinegar, fresh basil, and chopped parsley, then combine the cooked pasta with the sauce. Add reserved pasta water as needed to achieve desired creaminess.
- Just before serving, mix in grated Parmesan and mozzarella, allowing them to melt and intertwine with the pasta. Top with sliced chicken, and finish with additional herbs and red pepper flakes if desired.
