Ingredients
1 pound boneless
skinless chicken breasts cut into bite-sized pieces
1/2 cup hot sauce (such as Frank’s RedHot)
1/4 cup unsalted butter melted
2 tablespoons olive oil
Salt and pepper to taste
2 cups cooked rice (white or brown)
1 cup shredded lettuce
1 cup cherry tomatoes halved
1/2 cup shredded cheddar cheese
1/4 cup ranch or blue cheese dressing
1/4 cup thinly sliced green onions
Optional: sliced avocado for topping
Instructions
- In a large bowl, combine the hot sauce and melted butter. Add the chicken pieces and toss to coat.
- In a skillet, heat olive oil over medium heat. Add the chicken and cook until golden brown and cooked through, seasoning with salt and pepper.
- To assemble the bowls, layer cooked rice in each bowl.
- Top the rice with the buffalo chicken, then add shredded lettuce, cherry tomatoes, and shredded cheddar cheese.
- Drizzle with ranch or blue cheese dressing and garnish with green onions and avocado if desired.
