Ingredients
Large bell peppers
pre-cooked shredded chicken
paleo mayonnaise
hot sauce or buffalo sauce
garlic powder
onion powder
nutritional yeast
green onions
Whole30 ranch dressing
Instructions
- Preheat your oven to 375°F (190°C) and prepare a baking dish.
- Cut the tops off the bell peppers and remove the seeds, then place them upright in the baking dish.
- In a mixing bowl, combine the shredded chicken, paleo mayonnaise, hot sauce, garlic powder, onion powder, and nutritional yeast.
- Stir until the mixture is well combined and season to taste.
- Spoon the filling into each bell pepper, packing it gently.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 5-10 minutes until the peppers are tender and the filling is heated through.
- Garnish with chopped green onions and drizzle with Whole30 ranch dressing before serving.
Notes
Feel free to use whatever color bell peppers you like and customize the level of spice by adjusting the amount of hot sauce. These peppers make great leftovers too!
