Ingredients
1 cup butter (unsalted softened)
1 cup of brown sugar (light or dark)
1/2 cup of granulated sugar
2 large eggs

2 cups quick oats
1/2 cup mini chocolate chips
1/4 cup chopped pistachios
1 1/2 cups ricotta cheese (drained)

Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, followed by the vanilla extract.
- Combine the flour, baking soda, and salt in a separate bowl, then gradually mix it into the wet ingredients.
- Fold in the quick oats, mini chocolate chips, and chopped pistachios until evenly distributed.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown. Allow the cookies to cool completely on a wire rack.
