Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, followed by the vanilla extract.
  • Combine the flour, baking soda, and salt in a separate bowl, then gradually mix it into the wet ingredients.
  • Fold in the quick oats, mini chocolate chips, and chopped pistachios until evenly distributed.
  • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are golden brown. Allow the cookies to cool completely on a wire rack.
