Description

Caprese Chicken combines juicy chicken breasts topped with fresh mozzarella, tomatoes, and basil, drizzled with balsamic vinegar for a flavorful meal.


Ingredients

4 (6 ounce) skinless

boneless chicken breast halves

1 cup Italian salad dressing

1 tablespoon Italian herb seasoning

1 tablespoon chicken seasoning (such as Grill Mates® Montreal Chicken Seasoning)

2 tablespoons canola oil

4 (1/2 inch thick) slices fresh mozzarella cheese

4 (1/2 inch thick) slices tomato

4 large fresh basil leaves

1 tablespoon balsamic vinegar


Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine the Italian salad dressing, Italian herb seasoning, and chicken seasoning. Add the chicken breasts, making sure they’re well coated. Marinate for at least 30 minutes.
  • In a large ovenproof skillet, heat the canola oil over medium-high heat. Add the marinated chicken breasts and sear for 4-5 minutes on each side until golden brown.
  • Top each chicken breast with a slice of mozzarella cheese, a slice of tomato, and a basil leaf.
  • Transfer the skillet to the preheated oven and bake for 20-25 minutes until the chicken is cooked through and the cheese is melted.
  • Drizzle with balsamic vinegar before serving.

Notes

Feel free to use other fresh herbs or add a sprinkle of pepper for extra flavor.
