3 Granny Smith apples

peeled

cored and finely chopped (about 3 cups)

2 tablespoons sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 cup firmly packed brown sugar

1 cup all-purpose flour

1/2 cup quick cooking oats

1/2 cup butter

softened

1/2 cup caramel topping for drizzling after baked


Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  • In a large bowl, combine the flour, brown sugar, and softened butter to make the crust. Press the mixture evenly into the bottom of the prepared pan.
  • In another bowl, beat the cream cheese and sugar together until smooth. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  • In a separate bowl, toss the chopped apples with 2 tablespoons of sugar, cinnamon, and nutmeg. Fold the apple mixture into the cream cheese mixture until well combined.
  • Pour the cheesecake filling over the crust in the baking pan, spreading it evenly.
  • For the streusel topping, combine brown sugar, flour, oats, and softened butter in a bowl until crumbly. Sprinkle the streusel over the cheesecake filling.
  • Bake for 30-35 minutes or until set and lightly browned. Allow to cool before drizzling with caramel topping.
