Ingredients
2 cups all-purpose flour
1/2 cup firmly packed brown sugar
1 cup butter
softened
3 (8 ounce) packages cream cheese
softened
3/4 cup sugar
3 large eggs
1 1/2 teaspoons vanilla extract
3 Granny Smith apples
peeled
cored and finely chopped (about 3 cups)
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup firmly packed brown sugar
1 cup all-purpose flour
1/2 cup quick cooking oats
1/2 cup butter

1/2 cup caramel topping for drizzling after baked
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, mix together the 2 cups of flour, 1/2 cup brown sugar, and 1 cup softened butter until crumbly, then press into the bottom of the prepared dish.
- In another bowl, beat the cream cheese, 3/4 cup sugar, 3 eggs, and 1 1/2 teaspoons vanilla extract until smooth and well combined.
- Fold in the chopped apples, 2 tablespoons sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon nutmeg.
- Spread the cheesecake filling evenly over the crust in the baking dish.
- In a separate bowl, combine 1 cup brown sugar, 1 cup flour, 1/2 cup oats, and 1/2 cup softened butter to form a streusel; sprinkle over the filling.
- Bake for 30 minutes, or until the top is golden and the filling is slightly set.
- Allow to cool, then drizzle with caramel topping before serving.
Notes
