24 ounces (680 grams) cream cheese

completely softened to room temperature

1/2 cup (100 grams) granulated sugar

1/2 cup (100 grams) light brown sugar

1/4 cup (59 grams) heavy cream

4 large eggs

at room temperature

2 teaspoons vanilla paste (or vanilla extract)

1/2 cup homemade salted caramel sauce

or store-bought


Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  • In a bowl, mix together melted butter, granulated sugar, cocoa powder, sea salt, and vanilla extract.
  • Add in the eggs, one at a time, mixing well after each addition, then fold in the all-purpose flour until just combined.
  • Pour the brownie batter into the prepared springform pan and spread evenly.
  • In another bowl, beat together cream cheese, granulated sugar, light brown sugar, and heavy cream until smooth. Add in the eggs, one at a time, mixing in the vanilla paste.
  • Pour the cheesecake batter over the brownie layer in the pan.
  • Bake in the preheated oven for about 30 minutes or until the center is set but slightly jiggly.
  • Remove from the oven and let cool. Once cooled, drizzle with salted caramel before serving.

Notes

For best results, use room temperature ingredients and allow the cheesecake to cool completely before slicing. Store any leftovers in the refrigerator.
