Instructions
- Preheat your oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, granulated sugar, and melted unsalted butter until well combined. Press this mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large mixing bowl, beat the cream cheese until smooth. Add sour cream, vanilla extract, and granulated sugar, mixing until creamy and well combined.
- Slice the ripe bananas and gently fold them into the cream cheese mixture. Pour this filling over the prepared crust and spread evenly.
- Bake in the preheated oven for about 30 minutes, or until the edges are set and the center slightly jiggles. Remove from oven and let it cool before refrigerating for at least 4 hours.
- To make the rum glaze, caramelize sliced bananas in a skillet with brown sugar until golden. Add dark rum and simmer until slightly thickened. If using, stir cornstarch mixed with cold water to achieve desired thickness.
