1/2 cup butter melted
1 cup light brown sugar packed
1 large egg
1 tablespoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup shredded carrots
4 ounces cream cheese room temperature
1/4 cup granulated sugar
1 large egg yolk
3/4 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a mixing bowl, combine the melted butter and light brown sugar until well blended.
- Add the large egg and 1 tablespoon of vanilla extract to the mixture, stirring until smooth.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined, then fold in the shredded carrots.
- In another bowl, beat the cream cheese with granulated sugar until smooth, then mix in the egg yolk and 3/4 teaspoon of vanilla extract until well combined.
- Pour half of the carrot cake batter into the prepared pan, spread evenly, and dollop the cheesecake mixture on top.
- Pour the remaining carrot cake batter over the cheesecake layer and use a knife to swirl the two mixtures together.
- Bake in the preheated oven for 30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan before cutting into bars and serving.
Notes
For an added touch, consider topping with a cream cheese frosting or a sprinkle of nuts before serving.
