Description

These Carrot Cake Cookies are a delightful twist on traditional carrot cake, featuring a creamy cheesecake filling and topped with a luscious cream cheese frosting.


Ingredients

6 oz Cream cheese

3 TBSP White granulated sugar

1 tsp Pure vanilla extract

3 cups All-purpose flour

1 tsp Baking soda

1 tsp Salt

2 tsp Ground cinnamon

1/4 tsp Ground nutmeg

1 cup Unsalted butter

melted and cooled

1 cup Brown sugar

packed light or dark

1/2 cup White granulated sugar

1 cup Finely grated carrots

1 tsp Pure vanilla extract

2 Large egg yolks

room temperature

2 oz Cream cheese

room temperature

2 TBSP Unsalted butter

room temperature

3/4 cup Powdered sugar

sifted

1 tsp Pure vanilla extract


Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine 6 oz of cream cheese, 3 TBSP of sugar, and 1 tsp of vanilla extract to make the cheesecake filling. Mix until smooth and set aside.
  • In another bowl, whisk together 3 cups of flour, 1 tsp of baking soda, 1 tsp of salt, 2 tsp of ground cinnamon, and 1/4 tsp of ground nutmeg.
  • In a large mixing bowl, cream the melted butter, 1 cup of brown sugar, and 1/2 cup of sugar until light and fluffy.
  • Add 1 cup of finely grated carrots, 1 tsp of vanilla extract, and 2 large egg yolks to the butter mixture, mixing well.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Drop spoonfuls of dough onto the prepared baking sheet and create a small well in the center of each cookie.
  • Fill each well with the cheesecake filling.
  • Bake for about 12-15 minutes, or until the edges are lightly golden.
  • Let the cookies cool completely before frosting.
  • For the frosting, beat together 2 oz of cream cheese, 2 TBSP of butter, 3/4 cup of powdered sugar, and 1 tsp of vanilla extract until smooth and creamy.
