Cauliflower Fried Rice is a healthy and delicious alternative to traditional fried rice, packed with vegetables and flavor, perfect for a quick weeknight meal.
Ingredients

1 medium head cauliflower cut into florets
1 tablespoon avocado oil
4 green onions sliced
whites and greens separated
1 (10-ounce) bag frozen peas and carrots
2 garlic cloves minced
½ teaspoon salt
½ teaspoon black pepper
2 large eggs whisked
2 tablespoons soy sauce
1 teaspoon sesame oil
Instructions
- In a food processor, pulse the cauliflower florets until they resemble rice grains.
- Heat the avocado oil in a large skillet over medium heat. Add the white parts of the green onions and sauté for 1-2 minutes.
- Stir in the frozen peas and carrots, garlic, salt, and pepper. Cook for an additional 3-4 minutes.
- Push the vegetable mixture to the side of the skillet and pour in the whisked eggs, scrambling them until cooked through.
- Add the riced cauliflower, soy sauce, and sesame oil. Mix everything together and cook for another 5-7 minutes until the cauliflower is tender.
- Garnish with the green parts of the green onions before serving.
Notes
Feel free to add other vegetables or protein to customize your cauliflower fried rice. For a vegan version, omit the eggs.
