Description
This Cauliflower Pasta Sauce is an easy and creamy Alfredo recipe that is both delicious and healthy. Made with fresh cauliflower and cashews, it’s a perfect guilt-free option for your pasta night.
Ingredients
½ large head of cauliflower washed and chopped
6 cloves garlic peeled
3 tablespoons olive oil divided
1 teaspoon salt plus more to taste
1 teaspoon vegetable stock powder or Vegeta seasoning
½ cup raw cashews
1½ cups almond milk or your favorite milk substitute
½ cup nutritional yeast
Juice of ½ lemon
300 g fettuccine cooked aldente
Salt pepper and a pinch of nutmeg to taste
Fresh parsley chopped for garnish
Instructions
- In a large pot, bring water to a boil and cook the fettuccine according to package instructions until al dente. Drain and set aside.
- In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped cauliflower and garlic, sautéing until the cauliflower is tender, about 8-10 minutes.
- Add the sautéed cauliflower and garlic to a blender along with 1 tablespoon of olive oil, salt, vegetable stock powder, raw cashews, almond milk, nutritional yeast, and lemon juice. Blend until smooth and creamy.
- In a large mixing bowl, combine the cooked fettuccine and the cauliflower sauce. Stir to coat the pasta evenly.
- Season with salt, pepper, and nutmeg to taste. Serve immediately, garnished with fresh chopped parsley.
Notes
For an extra creamy texture, soak the cashews in water for at least 2 hours before blending. You can also use any other pasta shape you prefer.
