Ingredients
¼ cup butter

¾ cup brown sugar

2 teaspoons cinnamon
1 box vanilla cake mix (15.25 ounce)
2 eggs
⅓ cup vegetable oil
2 tablespoons butter
melted
1 cup powdered sugar
2 tablespoons milk or heavy cream
¼ teaspoon vanilla extract
3 tablespoons green sanding sugar
3 tablespoons purple sanding sugar
3 tablespoons yellow sanding sugar
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a bowl, mix together the melted butter, brown sugar, and cinnamon to create the filling.
- In another bowl, combine the vanilla cake mix, eggs, and vegetable oil until well blended.
- Scoop dough onto the prepared baking sheet and create a thumbprint in the center.
- Fill each thumbprint with the cinnamon mixture and bake for 12-15 minutes.
- While cookies cool, prepare the frosting by mixing together melted butter, powdered sugar, milk, and vanilla until smooth.
- Frost the cooled cookies and sprinkle with sanding sugars for that festive Mardi Gras touch.
Notes
For an extra twist, substitute vegetable oil with melted coconut oil. Adjust the consistency of the frosting with more or less milk.
